Warm Brussels with Pomegranate Seeds
Festive and bright, this salad is full of antioxidants, fibre and flavor to make sure you #eatyourveggies this holiday season.
3 cups of brussel sprouts
1/4 cup olive oil
3 tbsp cider vinegar
1 tbsp dijon mustard
1 tbsp honey
salt and cracked black pepper
1/3 cup pomegranate seeds
1/4 cup feta cheese, crumble
finely chopped fresh parsley for garnish (optional)
In large bowl, whisk together oil, vinegar, mustard, honey, salt and pepper, set aside
Bring a large pot of water to boil, meanwhile trim off stems from Brussels sprouts or cut them in half (quarters if they are too large), clean them by pulling off outer leaves if needed
Add brussel sprout wedges into boiling water, simmer until slightly softened and bright green, about 3 mins
Drain the brussels and pour into the bowl of dressing, toss to coat.
Sprinkle with pomegranate seeds, cheese and parsley, and transfer to a pretty serving platter! ENJOY!
