Vegan Caesar with Crispy Chickpeas
This kale caesar salad with vegan dressing is inspired by the fabulous Oh She Glows Blog! It is full of flavour, rich and creamy and is topped with crispy crunchy chickpeas for that #plantbased power.
This dressing is a cashew nut based, fully plant based, and still tastes incredible
1/2 cup raw cashews soaked overnight in water to soften, drain
2 tsp capers
1/2 tbsp Dijon mustard
2 shakes of worcestershire
1 garlic clove
1 tsp garlic powder
1 tbsp lemon juice
2 tbsp olive oil
1/4- 1/2 cup water to make more liquid Blend all in a blender or use a hand held immersion blender
For the crispy chickpeas be sure to rinse and drain the canned chickpeas well and pat dry using paper towel or dish cloth. Toss in olive oil & garlic powder and bake at 425 for 20 minutes until golden, longer if desired. ______________________________________ This delicious dressing adorns a bed of romaine and shredded kale studded with crispy roasted garlic chickpeas and sprinkled with Hemp Heart Salad Toppers.
