Sun dried Tomato & White Bean Salad

This quick and easy bean salad featuring the cannellini or white bean paired with fresh, simple seasonings. It is tangy, fresh, vibrant and full of flavor.




INGREDIENTS

  • 1 can | 12 ounces cannellini (white beans) rinsed & drained well

  • 1/4 cup white onion diced

  • 1 small clove of minced or grated garlic

  • 1/4 cup sun dried tomatoes packed in oil (see picture below for the one I used)

  • 1/4 cup freshly chopped parsley

  • 1 teaspoon crushed red pepper flakes

  • 1/2 teaspoon ground black pepper

  • 2 tablespoons red wine vinegar

  • 1 tablespoon oil from jar of sun dried tomatoes

  • 2 oz goat cheese crumbles (or feta)

DIRECTIONS

  1. Whisk together vinegar, sun dried tomatoes with oil, garlic, onion and chili flakes in the a large bowl


2. Add rinsed beans and parsley to the "dressing", toss to combine

3. Finish the salad with crumbled goat or feta cheese

4. Store in an airtight container for up to 4 days in the fridge, and it gets better as it sits!
