Roasted Salmon Sheet Pan Dinner

Roasted lemon salmon sheet pan dinner with roasted potatoes and spring asparagus. 1 pan, 1 mess, 1 balanced meal. Yes please!

4 atlantic salmon fillets (150g each)
1lb bag of baby red potatoes
1 lb asparagus (1 bundle)
2 tbsp olive oil, divided
1/4 tsp salt
fresh cracked pepper
1 lemon, zest and juice
Pre-heat oven to (400-450) degrees
Cut the potatoes in half to reduce cooking time, toss with 1 tbsp olive oil, salt, and pepper.
Place on half of the baking sheet lined with parchment paper, bake for 20 minutes, remove tray from oven.
Place salmon fillets on other half of tray and grate the zest of the lemon evenly among the fillets , top with pepper.
Arrange the asparagus around the salmon and potatoes, drizzle with 1 tbsp olive oil.
Bake for an additional 10-12 minutes until salmon is cooked through
Remove from the oven and squeeze fresh lemon on top of it all.
