Recipe: Crunchy Peanut Butter Parfaits
Grab a spoon and dig into these portable parfait cup with crunchy granola crack topping. Make them for a grab and go snack, or breakfast on the run, also work great for camping or picnics! Read my last post for more picnic inspo.

INGREDIENTS
Crunchy Granola "Crack"
1/4 cup of large flake oatmeal
2 tbsp crushed peanuts
1 tbsp coconut oil
1 tbsp honey or maple syrup
Layers
1 banana sliced
Some peanut butter (amount varies based on how much you like)
3/4 cup plain greek yogurt
DIRECTIONS
Granola Crack
Heat a small pan over medium heat and melt coconut oil
Add oats and peanuts
Toast until golden brown about 3 mins
Add honey, mix well and continue to toast until golden brown
Let cool completely before you build that parfait
The Build
Add 1 tbsp of granola topping at the bottom of a bowl/jar/tupperware/parfait
Layer 1/4 cup of greek yogurt
Press 1/4 of sliced bananas around and onto of yogurt
Drizzle entire layer with peanut butter (2-3tsp in total)
Repeat another layer, and top if off with leftover granola
