Recipe: Chicken Tacobout’ it Bowls


These DIY taco bowls filled with seasoned ground chicken, crispy veggies and fun toppings, make a great weeknight family meal!

Serves 6

INGREDIENTS

  • 1 lb ground chicken

  • 2 tbsp low sodium taco seasoning

  • 2 tbsp water

  • ½ cup medium spice salsa

  • 6 cups shredded romaine lettuce

DIRECTIONS

  • Heat a medium sized saucepan to medium heat, add ground chicken and cook until there is no pink, about 7 mins

  • Sprinkle in taco seasoning and water, allow chicken to cook for 5 more minutes

  • Add in salsa and heat through

  • Divide lettuce among taco bowls, and add ½ cup ground chicken per serving, top with the toppings that you like! (see list below)

TOPPINGS

  • Diced cherry tomatoes

  • Shredded cheddar cheese ( 1 tbsp per)

  • Sliced Green onion

  • Black beans (optional)

  • Greek Yogurt for drizzle on top



If you are feeling extra extra, maybe you can make your own taco bowl!


For the Tortilla bowls, use mini-tortilla shells:

  • Heat oven to 400 degrees

  • Take a 12 tin muffin pan and turn it upside down

  • Press each shell between 4 muffin cups, a 12 muffin liner should make 3 shells

  • Bake for 12 -15 minutes until golden brown
