Recipe: 4-ingredient Peanut Butter & Jam Cookies

Yes, they are made with REAL SUGAR, but with only 4 ingredients, what can you expect. They are still cookies, still dessert, so just make sure you don't eat them all, don't say that I didn't warn you. Makes 18-20 cookies (based on size).


Yes dietitians like sweet treats too! Simple ingredients, and fruit when possible...let me just say, this will be the start of a new addiction.


INGREDIENTS (are you ready?)

  • 2 cups of the OG (original gangster) smooth peanut butter

  • 1 cup REAL white sugar (oh no!)

  • 2 eggs

  • 1 cup fresh raspberries



DIRECTIONS

  • Pre-heat oven to 350 degrees

  • In a large bowl mix peanut butter, sugar and eggs with a wooden spoon until well mixed and thick

  • Gently fold in clean, whole raspberries without making them mushy

  • Time to get baked: On a large cookie sheet, scoop the cookies out or measure 1-2 tablespoons of batter (I usually do larger cookies aka 2 tbsp), place them 3 inches apart on the sheet

  • Press them down with a fork, vertically, then horizontally, or any way you want really...or not at all, but they look better pressed (you may need to wet the fork to prevent sticking)

  • Bake them for 12-15 minutes until the edges are slightly golden, remove from oven and let cool on pan for 10 mins, remove from tray and cool completely

STORE THEM IN THE FREEZER, just to make sure you don't eat them all at once!
