Pumpkin' to Talk about Cookies.
Mildly sweet, wildly chewy, warmed with pumpkin spice. Yup this recipe is a keeper!
1 cup whole wheat flour
1 teaspoon pumpkin pie spice
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter or margarine or coconut oil softened
1/2 cup brown sugar
1 tbsp coconut sugar
1 large egg yolk room temperature
1 teaspoon pure vanilla extract
1/3 cup pumpkin puree
1 and 1/2 cups old-fashioned rolled oats
1. Stir dry ingredients together with a fork.
2. In a separate bowl mix butter and sugar until fluffy, add the egg and vanilla and cream until smooth, stir in the pumpkin.
3. Mix wet and dry ingredients together until combined. Fold in oats.
4. Spoon by 2 tbsp unto a lined sheet tray, bake 10 mins at 350 degrees!
