Pumpkin Spice Energy Bites

Why not combine two obsessions-- Pumpkin Spice & Energy Bites, well here you have it. A simple recipe that makes a satisfying snack or lightly sweetened dessert.

1 ½ cup large flake oats
½ cup peanut butter
¼ cup maple syrup or honey
¼ cup chia seeds
½ cup pumpkin puree from a can
2 tsps of pumpkin pie spice (or 1 1/2 tsp cinnamon, 1/2 tsp nutmeg)
½ cup mini chocolate chips
In a large bowl mix honey, maple syrup, spices and pumpkin until combined
Stir in oats and chocolate chips until the mixture starts to soften and come together, add more oats a little at a time if the mixture is too loose
Roll into 1 tbsp size balls, or press into mini-muffin tins that are greased. Freeze on a baking tray until completely solid
Store these in the freezer in an airtight container for up to 4 months
