Pumpkin Spice Energy Bites

Why not combine two obsessions-- Pumpkin Spice & Energy Bites, well here you have it. A simple recipe that makes a satisfying snack or lightly sweetened dessert.

That mini pumpkin was not harmed when making these!

INGREDIENTS

  • 1 ½ cup large flake oats

  • ½ cup peanut butter

  • ¼ cup maple syrup or honey

  • ¼ cup chia seeds

  • ½ cup pumpkin puree from a can

  • 2 tsps of pumpkin pie spice (or 1 1/2 tsp cinnamon, 1/2 tsp nutmeg)

  • ½ cup mini chocolate chips

DIRECTIONS

  1. In a large bowl mix honey, maple syrup, spices and pumpkin until combined

  2. Stir in oats and chocolate chips until the mixture starts to soften and come together, add more oats a little at a time if the mixture is too loose

  3. Roll into 1 tbsp size balls, or press into mini-muffin tins that are greased. Freeze on a baking tray until completely solid

  4. Store these in the freezer in an airtight container for up to 4 months
