Pumpkin Pie Overnight Oats

Pumpkin Pie for breakfast? Yes please! This recipe is simple to make and is a great breakfast option to keep you feeling full and energized with whole grain oats, creamy pumpkin and chia seeds.

1/2 cup large flake rolled oats
1/2 milk of choice
1/4 cup of pumpkin puree (from a can)
1 tablespoon maple syrup
1 tablespoon chia seeds
1 teaspoon vanilla extra
1 tsp pumpkin pie spice
Pecans and apples for topping are optional but both taste delicious
Combine all of the ingredients in a mason jar, bowl or Tupperware container , except the toppings (apple or pecans), and shake or stir really well
Refrigerate overnight or up to 3 days, and enjoy cold from the refrigerator
Add your toppings right before you are ready to eat to make sure they don't get soggy
