Pumpkin Pie Overnight Oats

Pumpkin Pie for breakfast? Yes please! This recipe is simple to make and is a great breakfast option to keep you feeling full and energized with whole grain oats, creamy pumpkin and chia seeds.

INGREDIENTS

Serves 1

  • 1/2 cup large flake rolled oats

  • 1/2 milk of choice

  • 1/4 cup of pumpkin puree (from a can)

  • 1 tablespoon maple syrup

  • 1 tablespoon chia seeds

  • 1 teaspoon vanilla extra

  • 1 tsp pumpkin pie spice

  • Pecans and apples for topping are optional but both taste delicious


DIRECTIONS

  1. Combine all of the ingredients in a mason jar, bowl or Tupperware container , except the toppings (apple or pecans), and shake or stir really well

  2. Refrigerate overnight or up to 3 days, and enjoy cold from the refrigerator

  3. Add your toppings right before you are ready to eat to make sure they don't get soggy

Enjoy these straight from the jar, or pour them into a bowl before serving- both delicious!
