Peanut Butter Cup Energy Bites

1 cup pitted dates (soak in warm water for 5 minutes, drain well)
2 tbsp smooth peanut butter
2 tbsp almond butter (or use all peanut butter)
1/4 cup dark chocolate chips
1 tbsp chia seeds
2/3 cup quick cooking oats

Pulse dates in a food processor until they’re in small pieces or it forms a paste.
Add oats, chia seeds and nut butters. Pulse or mix until combined. You want some texture, not totally blended away.
Add in the chocolate chips and pulse until combined.
Pour mixture into a bowl and add some candy pieces, while reserving the others to press into the molds.
Roll them into 1 tbsp balls, or press into small baking molds, decorating with extra candy.
To set, pop in fridge or freezer for 15 minutes. They will keep fresh in an air-tight container for up to a week or freeze them for the long haul.
