One Pan Dinner: Chicken and I don't Carrot all

Easy one pan meal with turmeric spiced rainbow carrots, caramelized onion, tender sweet potato and roasted chicken breasts-- because we can all find a new way to eat those.

  • 1 medium Sweet Potato, diced into cubes

  • 3 large rainbow carrots diced into coin size pieces (just use orange carrots as well)

  • 2 small chicken breasts

  • 2 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • ¼ cup freshly chopped parsley

  • 1 tsp each turmeric & 1 tsp paprika

  • 1/4 cup sliced red onion (purchase pre-sliced if it is easier--and it is!)


  1. Pre-heat your oven to 400 degrees C, and prep a large baking sheet by lining it with parchment paper

  2. Dice the sweet potato and carrots and place them into a large bowl

  3. Drizzle them with the olive oil, balsamic vinegar and spices

  4. Lay them flat on the baking sheet

  5. Slice your chicken into thin strips, almost like a stir fry and scatter them among the vegetables

  6. Top the veggies and chicken with the red onion slices and sprinkle generously with pepper

  7. Bake for 25-30 minutes until the sweet potato is fork tender (at this point the chicken will be cooked already)

  8. As soon as it comes out of the oven, sprinkle with fresh chopped parsley and drizzle with extra balsamic vinegar if you choose
