Mean Green Muffins
Doesn't Mean Green Muffins sound a whole lot better than Spinach Banana Muffins? That is exactly what these are; oat flour, sweetened with honey and packed with nutrients from flax, spinach and banana. I first enjoyed these muffins from a dear friend who made them for her son, and I fell in love, and have adapted the original recipe from Joy Food Sunshine!
2 cups oats (rolled or old fashioned)
¼ cup ground flax
1/4 cup ground almonds or almonds flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 cup honey or coconut sugar or your favorite granulated sugar
½ cup almond milk or regular milk
2 cups packed spinach leaves
¼ cup coconut oil
2 extra-ripe large bananas
1 tsp vanilla
OPTIONAL: M&M's or chocolate chips
Preheat oven to 375 degrees and grease or line a muffin tin
Blend oats in your blender until the oats achieve the texture of flour.
Transfer to a medium mixing bowl and add the other dry ingredients to the oat flour (ground flaxseed, almond flour, baking powder, baking soda, cinnamon and sugar).
To the empty blender, add almond milk, spinach, eggs, vanilla, honey, and blend together until completely smooth.
Add bananas and coconut oil and blend until smooth.
Pour wet ingredients to dry mixture and stir to combine.
Fill each well in your muffin tin with ¼ cup of batter and sprinkle with M&M's or chocolate chips.
Bake for 20-25 minutes or until toothpick comes out clean.
