Chia Jam & Peanut Butter Cracker
This is is such a quick and satisfying snack. A crunchy, sweet Ryvita wafer smothered in a thick layer of creamy peanut butter topped with juicy chia jam. This one is messy, be careful!
This is an ideal snack because it combines a smart grain choice, with fat/protein from peanut butter, and a kick of fruit from chia jam, so is a nice balanced option, pairs really well with a glass of milk.
Here's how to get it:
Start with your base: in this case my favorite Ryevita Wafer is the Muesli Crunch or Fruit Crunch--it is lightly sweetened and has currants in it for an extra sweet kick :)
Spread 1 tbsp of your favorite peanut butter on top of the cracker
Spread 1 tbsp of chia jam on top of that---
How to make the Chia Jam:
Simmer 1 cup of frozen raspberries with 1/4 cup of water until they soften, cool for 5 minutes
Stir in 3 tbsp black whole chia seeds, 1/2 tbsp lemon juice, and 1 tablespoon of honey
Cool completely and store in a airtight container in the fridge for 1 week
