Flourless Chickpea Blondies

These chewy and rich "blondies" are completely flour-less and full of plant based power from chickpeas and lightly sweetened with maple syrup. They are a crowd-pleasing, guilt free snack. Just don't eat the whole tray, okay?



INGREDIENTS

  • 2 cups canned chickpeas, drained and rinsed

  • ½ cup almond butter

  • 3 large eggs

  • ⅓ cup maple syrup

  • 2 tsp vanilla extract

  • ¼ tsp baking powder

  • ¼ tsp baking soda

  • ½ cup dark, mini chocolate chip

  1. DIRECTIONS

  2. Preheat oven to 375 degrees and prep an 8×8 square pan by lining it with parchment paper

  3. In a food processor, blend all ingredients, except except chocolate chips

  4. Fold in chocolate chips

  5. Spread batter evenly in pan, tapping and shaking pan if you need to

  6. Sprinkle the top with some extra chocolate chips

  7. Bake for 30-35 minutes

  8. Let the pan cool completely before cutting into squares
