Fall Harvest Salad

This salad is a super food blend of fall flavors including pumpkin, cranberries, pecans, and it all starts with the basic bagged salad, drizzled in a poppy seed apple cider vinaigrette. Watch the videos below for how to roast pumpkin too!

Whatever you have in the fridge or pantry, toss it in, I'm sure it will taste great!


INGREDIENTS

Serves 4

  • 2 cups roasted pumpkin or butter nut squash (watch video below for how to roast & dice pumpkin)

  • 2 cups arugula or spinach

  • 2 cups kale salad (from the bag) or kale

  • 1 cup cooked and cooled quinoa (see notes below on how to cook quinoa)

  • ¼ cup cranberries (you can also use the package from the bagged salads)

  • ¼ cup pumpkin seeds

  • ¼ cup pecans

  • ¼ cup goats cheese or feta

  • 2 small apples diced

  • Salad dressing from the bagged salad (poppyseed)

  • 2 tbsps apple cider vinegar

  • 1 tbsp olive oil


DIRECTIONS

  1. Cook and cool your quinoa. If you have ANY leftover grain from meals earlier in the week, use that instead, or make some extra quinoa when you are doing meal prep. But here is a quick way (boil 2 cups of water on high heat in a small pot, once water is boiling add 1 cup of quinoa, turn the temperature down to low or simmer, place a lid on the pot, and simmer for 12 minutes--set a timer. Fluff quinoa with a fork to make sure there is no water at the bottom of the pot). Cool quinoa completely before adding to your salad.

  2. Roast your pumpkin, watch the 2 videos below for full directions. If you can purchase pre-diced or pre-roasted pumpkin, that is another good option, butternut squash or sweet potato can also be substituted.





3. Make the dressing by combining the whole bag of pre-made dressing with apple cider vinegar and olive oil. You can do this is a mason jar or a small bowl.


4. Place all of the greens (lettuces) into a large bowl and drizzle with 2-4 tbsps of the dressing that you just made, toss with your hands until the green are coated well.


5. Add in all of the remainder ingredients-except goat cheese and toss until just combined.


6. Plate this salad in a deep salad bowl or large plate and sprinkle crumbled goat cheese on top.
