Copycat Starbucks Pumpkin Loaf

Show me some LOAF <3 Here is a remix of a favorite. Spiced Pumpkin Loaf made with mashed banana to cut the sugar and add to the dense, chewiness of this beloved fall treat. Enjoy a thick slice of this pumpkin loaf with your breakfast, or have it for dessert, it is sure to satisfy that sweet tooth.


  • 3/4 cup all purpose flour

  • 3/4 cup whole wheat flour

  • 1/2 teaspoon salt

  • 2 teaspoon pumpkin pie spice

  • 1/2 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1/3 cup granulated sugar

  • 2 whole eggs

  • 1 cup pumpkin puree

  • 2 medium bananas mashed (about 1 cup)

  • 1/4 cup melted coconut oil

  • 1/4 cup water

  • 1/4 cup pumpkin seeds for the top of the loaf

Look at how chewy and moist that loaf is? Don't you just want to sink your teeth into that?


  1. Preheat oven to 350°F. Grease a 9 1/2 x 5 loaf pan or use a silicone loaf pan (no need to grease)

  2. In a large bowl, combine flours, salt, spice, baking powder and soda.

  3. In a separate bowl, melt coconut oil in the microwave for 30 seconds.

  4. To the coconut oil, add sugar, pumpkin, mashed banana, eggs and water and whisk until combined.

  5. Add the wet ingredients to the dry ingredients and stir until combined with a wooden spoon. Do not over mix :)

  6. Pour the batter into load pan and sprinkle pumpkin seeds over top, pressing them lightly into the top of the loaf with the back of a spoon.

  7. Bake for approximately 40 minutes, or until a toothpick inserted into the center comes out clean.

  8. Remove from the oven and cool for 15 minutes, once cool enough to handle, remove from the loaf pan and allow to cool completely

  9. Slice and enjoy warm or wrap half of it up and freeze it
