Blood & Guts Chocolate Bites, YUM?

Getting into the October vibes with tasty Halloween treats. I have made these dark chocolate pomegranate bites a few times now, and they always satisfy. They are sweet, creamy, and full of antioxidants from the dark chocolate and fresh pomegranate arils.

1 dark chocolate bar (75 or 80% cocoa)

1 tbsp coconut oil

the seeds of 1 whole pomegranate

1/4 cup double the fruit raspberry jam

You will also need mini muffin cups or small silicone baking mold to make the chocolates

Chocolate, antioxidant, pomegranate
The easiest way to clean a pomegranate is to slice it in half, and forcefully hit it with the back of a wooden spoon, allowing the gems to fall into a large bowl of clean water. WATCH YOUR FINGERS.

  1. Place the chocolate bar in a microwave safe boil and microwave on medium heat for 30 seconds at a time, stirring every 30 seconds, until melted

  2. Stir in the tablespoon of coconut oil until melted into the chocolate

  3. Fill your molds half-way with chocolate, about 1 tsp at a time until each is half fun, put these in the freezer to harden, about 30 seconds

  4. Clean your pomegranate until you have an abundance of the red gems from the inside, stay tuned for my video on how to clean a pomegranate

  5. Toss the pom seeds with the jam until the mixture is combined and sticky

  6. Remove chocolate molds from the freezer and fill with jam mixture until almost filled to the top

  7. Spoon remaining chocolate over each one and smooth with a spoon until the mold is completely full

  8. Chill in the freezer for 30 minutes until set, and store these in an airtight container for up to 6 months! You may have some leftover seeds and dark chocolate, these won't store well so make sure you eat them up!
