Banana Date Muffins
Homemade muffins are the best BECAUSE you can control what you put in them. Other commercial muffins, basically like eating cake. These #nofail muffins are a tried & true in my kitchen, plus they have only 6 ingredients! (then toppings) You can add a variety of toppings to them and they transform into a totally new creation! The batch featured in the photos have chewy dates, and crispy chopped pecans.

INGREDIENTS
Makes 6-10 muffins depending on the size of muffin tray
1 cup whole wheat flour
1/4 cup coconut oil or margarine, melted
2 eggs
2 large ripe bananas mashed with a fork (about 1 cup)
1 teaspoon baking soda
1/4 cup liquid honey
1 tsp cinnamon
1 cup of toppings of choice: these have 1/2 cup chopped pecans, 1/2 cup chopped dates
DIRECTIONS
Preheat oven to 350 degrees
Mash bananas in a large bowl or use your food processor, they don't have to be perfectly smooth
Whisk in eggs, vanilla, honey and oil
In a separate bowl mix together with a fork, flour, soda, cinnamon and toppings
Combine the wet and dry ingredients together, just until mixed, do not over mix
Spoon the batter into a muffin tray (1/4 cup mix at a time) and bake for 10-15 minutes max or until a toothpick inserted in the centre of the muffins comes out clean
You can freeze these in a container, for up to 3 months or store in the fridge for 1 week .
Now in case you are wondering how these muffins compare to a commercial muffin.....and by commercial I mean was bought at a store or restaurant, and is likely the size of a small baby's head....then yes you can visualize this...here you go. For the equivalent of ONE Banana Chocolate Chunk Commercial Muffin you could (if you wanted) consume 3 of these HOMEMADE BANANA DATE MUFFINS. Yikes....just saying.
